Pancake Day, one of the best food holidays on the UK calendar, is almost here! And we've designed a mouth-watering vegan pancake recipe for the occasion. A protein-packed, US-style Maple Bacon Pancake stack topped with THIS plant-based bacon rashers and a generous helping of pure Canadian maple syrup. This sweet-and-salty recipe makes a stack of 8-12 fluffy pancakes.

How to make vegan pancakes?

You might be wondering what wizardy goes into making perfect, fluffy pancakes without using dairy (eggs, milk, and butter). Well, thanks to a few innovative products, you can get the same perfectly light, fluffy, syrup-absorbing pancakes with only a few swaps.

Most importantly, you're going to need a good egg replacement. A Chia egg or flax egg will work, as well as apple sauce or mashed banana, but those options aren't great in this recipe as they will affect the flavour and texture.

As for the milk, you can simply use your preferred plant milk. We used oat milk for our pancake stack, but soy milk and almond milk also do the job quite well, not to mention the possible addition of vegan buttermilk. To reduce the amount of calories in your pancakes, simply swap milk with water, but the end result will be a little less thick.

Are vegan pancakes healthy?

We designed this milkless and eggless pancake recipe with special consideration to nutritional qualities and health promotion as compared to traditional maple bacon pancakes.

Compared to pancakes with non-vegan ingredients, the pancakes in this recipe have more protein, less saturated fat, and fewer calories.

The products we used for the entire batch offer an insane 50 grams of protein, are fortified with vitamin B12 and Iron, and also gluten free! Maple syrup is high in sugar, but contains micronutrients and is lower on the glucose index (GI) compared to other sweeteners and syrups, making them a better choice for diabetics.

So you can snack these bad-boys without guilt, use them liberally as part of your muscle building goals, and reduce your impact on the environment and animal exploitation all at the same time.

Not bad for a stack of pancakes.

What ingredients do I need?

To make these mouthwatering high protein pancakes, we recommend you use the following:

  • St Lawrence Pure Maple Syrup
  • Preferred plant milk of choice
  • Preferred oil of choice (preferably in a spray-bottle)

What cooking utensils do I need?

A flat, preferably non-stick frying pan, mixing bowl or measuring jug with a spout, and spatula will be all you need for this vegan recipe. You can mix the batter ingredients in a blender for a smoother consistency but it’s not 100% necessary.

Recipe Instructions

Ok, ingredients and utensils at the ready, let’s do this.

Step One

First, you're going to create the batter by mixing the wet ingredients (non dairy milk, Crackd egg substitute) and dry ingredients (flour) together.In a bowl or blender, mix 300g of the pancake flour with 120ml of the Crackd egg replacement, equivalent to two whole eggs. Add approximately 480ml of your preferred plant milk of choice (or water) and stir/blend until you get a consistent batter.The pancake batter should flow easily but also be slightly gloopy. The nutritious buckwheat flour based Profusion Organic Pancake mix already has baking powder and baking soda in, so no need to add.You can work some maple syrup into the batter for a sweeter overall flavour, but avoid that if you're looking to reduce the total sugars in the recipe.

Step Two

Now it’s time to start cooking.Heat two frying pans (one can work if it’s large and flat) to a medium heat, and spray or pour a small amount of oil into the centre. We used coconut oil, but for a lower saturated fat option choose regular olive oil or vegetable oil.It will take around 10 minutes to create a respectable stack of pancakes and about 6 minutes to crisp up the THIS Isn’t Bacon Plant Based Rashers, so fire off a few pancakes first and start cooking the vegan bacon about 4 minutes in for maximum efficiency!Slowly pour in the batter to the centre of the pan to your desired pancake size.By pouring it slowly, you are allowing more time for the base to harden, which provides a stable base for a taller, thicker pancake in line with decadent, US-style pancakes. Jostle the pan backwards or forwards after about 30 seconds to unstick the base of the pancakes from the pan. Huge pro-tip… The benefit of using oil in a spray bottle is that you can occasionally ‘spritz’ around the side of the pancakes to avoid them sticking to the pan and burning. Ok, now for the fun part.When bubbles have risen evenly across the top of the pancakes, ‘flip’ them by sliding them to the end of the pan in an upward motion, flicking your wrist towards yourself at the end of the movement to launch the pancake in the air so that they land on the uncooked sideThe prior step really separates the amateurs from the professionals, so give it your all!

Step Three

Now your stack is piling up, it’s time to throw on the vegan bacon rashers. Place the bacon rashers in the hot, oil-coated frying pan and allow to cook for 3 minutes.Your pan should be hot enough for the rashers to sizzle slightly. Occasionally move and check the underside of the rashers so they don’t overcook.Flip the vegan bacon rashers over and cook for an equal amount of time until both sides are crispy and brown.

Step Four

Continue making pancakes until you build a stack that will satisfy. Once you’re done, it’s time for some serious food presentation artistry. Place between 2 and 4 cooked vegan bacon rashers on top of your stack, and pour on a helping of pure Canadian maple syrup to tasteIf the nutrition side of this recipe is of no concern, feel free to throw a small slice of vegan butter on top of the stack for the ultimate decadent stack....And voila. The most beautiful stack of high protein, gluten-free fluffy pancakes you ever did see.
